Easy Camp Breakfast Hash with Sweet Potato and Chicken Sausage

Mid-January is generally too cold for happy camping, so I spent some time to cull my camping recipes and look for new ones to try. This easy breakfast recipe from eatthis.com uses carb-friendly (and nutrient rich) sweet potatoes rather than plain ol’ russets. A quick scan of the directions and I knew it would be a cinch to prep and cook on the camp stove. All the ingredients are delicious on their own, and I could hardly wait to taste the final dish!


Not willing to wait for my first spring camping outing, I made this recipe on a snowy January morning at home on my electric range. It’s a nice little blast of savory, sweet and spicy, and will definitely be added to my camp breakfast repertoire.
